Florine is a Research Fellow at AMS Institute, focusing on Metropolitan Food Solutions. With a strong background in the protein transition, she contributes to projects that aim to create healthier and more sustainable urban food environments. She previously collaborated with AMS Institute and the Municipality of Amsterdam on monitoring and improving the plant-to-animal protein ratio in municipal catering, helping align offerings with policy goals through targeted interventions.
At AMS Institute, Florine is currently involved in the exploratory phase of a potential public-private partnership that leverages AI and large language models to apply existing behavioral science knowledge more effectively to reduce health disparities across income groups. She also advises on strategic discussions related to the food environment, specifically focusing on protein transition.
Beyond AMS, Florine co-leads the Dutch National Protein Monitor, which tracks consumer protein intake, key drivers and barriers, and supermarket supply trends. She is also involved in several other research projects regarding the protein transition and organic food consumption.
